Porgyman- finally got a cast iron skillet, kids got me a Lodge for one of my Christmas gifts. Going to sear off some steaks tonight but in a week or two going to try your fried chicken. Where you been you racist bastard? _ Even if you got one "pre-seasoned," season it yourself. Yup, going to season it later this morning. _

I am shocked. How did you make corn bread? Gotta throw it in the cast iron skillet on the stove top first then throw the whole thing in the oven to finish.

When my Mom passed one of my sneaky ass siblings fat-fingered hers- must have been 60- 70 years old( I have 6 siblings and a few of them are squirrelly enough to have done that, I have my suspicions). So with all my pots and pans I never thought to get one until I saw a recipe for jalapeño cornbread and saw a bunch of fried chicken recipes. And to my shame I’ve never made cornbread- never really into baking _

Ok seasoned the skillet 4 times.
Seared off filet mignons with EVOO, garlic, fresh thyme, fresh rosemary, spooned butter, massively carmelized some vidalia onions, sautéed mushrooms in butter and Madeira wine, roasted cauliflower in red pepper flakes and garlic powder.
Monkey Shoulder.
Holy fuck.
Will poke the GF in the am.
Too stuffed.

Monkey Shoulder. Holy fuck. Will poke the GF in the am. Too stuffed. _ Don't use olive oil and especially not EVOO for searing. The smoke points are way too low. Avocado oil works great.

I’m WAITING! _ Oops. 2/3 cup of butter 1 cup sugar 3 eggs 1 and 2/3 cups of milk 2 and 1/3 cups of all purpose four 1 cup cornmeal 4 and 1/2 teaspoons of baking powder 1 tea salt In the Kitchen aid put the butter and sugar am cream Combine all other ingredients and add to the cream Heat the oven to 400 Ad a small amount of veg oil to a cast iron skill. heat the oil Once the oil is hot add the cornbread mixture Let it heat to popping. Careful not to burn Then throw the whole damn skillet in the 400 degree oven until complete. I can tell when it is done by how it looks. You can also use a tooth pick or butter knife to stab it in the middle. If the knife comes out clean it is done. If I make this as a breakfast side I will add butter to the top immediately after it comes out of the oven. Otherwise I do not touch it. I also use this for Jalapeno bread as well.
