12inch skillet? I’ll make this shit this weekend. _ My Lodge does not have a size on it. It looks about 12 in across though. Fits perfect. Can you slap you’re dick across it 3 times and confirm it’s 12 inches? _

Don't use olive oil and especially not EVOO for searing. The smoke points are way too low. Avocado oil works great. Yes I’ve heard that. It’s not true. The burning point v flavor point is a tipping point I am ok jumping over. _ If it's not true, you're not getting the skillet hot enough for a proper sear.

Canola, peanut, coconut, veggie. That’s the ticket. And 1000 recipes and videos I’ve seen said to cook only with EVOO which I’ve done for years to great effect. Flavor v burning point. I seared off the filets tonite in a very very slight touch of EVOO and dumped in 2 scoops of butter and it was awesome. Btw, when I wok Asian food I only use peanut oil. _

That’s the ticket. And 1000 recipes and videos I’ve seen said to cook only with EVOO which I’ve done for years to great effect. Flavor v burning point. I seared off the filets tonite in a very very slight touch of EVOO and dumped in 2 scoops of butter and it was awesome. Btw, when I wok Asian food I only use peanut oil. _ Not trying to be a weenis. Lower smoke point means bigger chance of error/burning oil and therefore ruining meat. I've done it before. Avocado oil is best with steaks. I don't grill steaks at all. Half way and flip. Maybe an inch of oil. Good choice on the skillet! Remember to prep the skillet before first use. Just Google prepping a cast iron skillet for instruction. Thanks. Lodge says they are pre-prepped but I'm going to prep it anyway. _ All you have to do is piss in it and leave it for 24 hours. Don't bother cleaning the pan, just empty it and start cooking. Works every time.
