recently been experimenting with smoked gouda but it doesn't melt well.... What temperature are you smoking it? For cheese, you should use a closed grill with zero fuel (charcoal, pellets, gas) and a smoke tube. Keep the cheese on the opposite side of the grill as the smoke tube and you'll be good to go. Also make sure the grill isn't sitting in the sun while you're smoking. I love most cheeses. Except Muenster. Boring ass yellow-rimmed chalky cheese. Tried rare roast beef with muenster, mayo salt and pepper on a crispy, seeded roll years ago (against my wishes, it sounded so very wrong) and I loved it. Not arguing, offering a different perspective from someone who wants to make out with you..alot.

Just a tip -, if you're going rare roast beef, horseradish sauce isn't the worst condiment.

Whole Wheat everything bagel, 2 slices of Munster, 2 slices of Pepperjack, 4 -5 slices of bacon. Fuck yeah.

Munster is a complementary cheese: ok on its own, but better when paired with other stuff. In my case, it mellows the pepperjack just a bit and provides some saltiness.
