Not seeing much of a smoke ring on the brisket. Did you do it in the oven?

Not seeing much of a smoke ring on the brisket. Did you do it in the oven? I have an electric smoker and you're right this time i only put in 1 small barrel of chips (applewood) Too much makes it a little bitter but I usually do a few. In a way its like a glorified crock.pot but the classic charcoal smoker required too much baby sitting this is a Canadian prime brisket from sams club Its cheaper maybe bc exchange rate and the feed is supposedly healthier, even if just grasses. I cut it in 2 and the larger point end especially was like butter even before i rested it. The flat was great too however after sitting in a chafing rack for several hours to keep safe First at my house then at a family party it seemed a little weird like the bark got a tiny bit dry. Next time ill just put it in the fridge unless done very close to party time. I read You could heat it up in a pot of water in a plastic bag bc oven would dry out

As for the charcoal, I have a life-changing recommendation. Look into the Masterbuilt Gravity series. Charcoal smoker/grill that is electric. There is a fan that regulates the temperature. I've had mine as low as 180° and as high as 700°. Great for smoking, grilling, and searing. The mid-size model comes with a griddle attachment, but I'm already have a 36" Blackstone, so not needed. Have had my Masterbuilt for close to three years and it cooks everything perfectly.
