masterbuilt analog electric smoker
total noob
hit me with tips and recipes
fyi i will be sitting roughly 6 feet from teh smoker

Which Masterbuilt? I have their 560 Gravity smoker/grill. Temps as low as 180° and as high as 700°, also electric but uses charcoal. Set it and forget it. Rule #1 for smoking, cook to internal food temp, not time. If someone tells you a brisket will take 18 hours, your particular brisket might cook shorter or longer. Feel free to share ideas. I've smoked everything from cheese to tri-tip. Something easy to start with are babyback ribs.

yeah this seems like more of a base model. goes anywhere from 249 - 299 depending on where you buy, i snagged one as they put it out with a clearance tag for 100 bucks
well built but not digital
what kind of thermometer do you use for checking internal temp? and doesn't all the smoke come out when you open it to stick the thermometer in?

I use the 5x8 a-maze-n smoke generator in my electric smoker. The electric smoker maintains temp and the a-maze-n makes smoke for hours using pellets. My masterbuilt couldn’t make smoke for more than 1 hour. Mine has a thermometer built in that you jab into the meat, so you never open the door to check internal temp.

If it's the Masterbuilt box unit I think it is, you have to let it come up to the desired cooking temp before adding the wood chips and then wait for them to start smoldering before adding the food. And Big L's offset suggestion is a good one, otherwise, as he said, you'll be adding chips every half hour, essentially babysitting it. Don't listen to anyone who says to soak the chips in water. If you're looking for chips, Amazon has a good selection from Weber. I use mostly apple, cherry, pecan and hickory. Mesquite has a really strong flavor that not everyone likes.

I use something similar for oven cooking. When I'm smoking, the Meater is the way to go.

Build quality isn't the greatest, but it's the best grill I've ever had. I mix in wood chunks with the charcoal and get a perfect smoke ring and perfect bark on whatever I'm cooking. There are other brands that have gravity grills, but none like Masterbuilt at the price point.

Best part about having a smoker is that it takes a long time to cook things. Low and slow. so you can sit around drinking beer all day. tell the wife you have to attend to the smoker, can’t do x y or z jobs she had planned for you. and even better is invite a couple buddies over while you smoke a pork butt for 10 hours.
