fingerling and duck poutine, never made it, giving it a try tonight. Bought a cheap bottle of red to go with it, Apothic Inferno aged in bourbon cask, 9.98??? will it taste that price, Ill let you know. Apothic is good for the price. That bourbon cask aged wine is bullshit IMO. Makes your wine taste like bourbon. Bourbon wine is exactly how it tasted

I'm not a fan of heavy reds like a cab or syrah. The Inferno is certainly heavy and pretty alcoholy to boot. I picked Inferno, wife picked the dark black label, which was much better. As I quoted BIg L, heavy bourbon taste, my 1st sip i was like OK, but struggled finishing it.

Have never made Hunter Sauce before used shallots cremini mushrooms butter white wine fresh thyme light cream and veal Demi glaze.
Awesome.
Going to eat the leftover sauce tomorrow on...a spoon.

Meat sauce Saturday, making a 12 quart pot for the Christmas lasagna and some to send home with the kids this week.
Rendered the pancetta and put it aside then EVOO tons of minced garlic chopped vidalia onions kosher salt ground beef veal pork sweet Italian sausage tons of double concentrated paste Chianti San fresh thyme oregano basil parsley bay leaves cracked pepper crushed red pepper San Marzano tomatoes pancetta back in and as an ode to my Mom a few thin slices of bell pepper.
Simmering now should cook down to about 10-1/2 quarts by about 6.
House smells incredible.

It was also a sin to throw out food so at least she’d be proud of me for that. Made a really saucy rigatoni the last 2 Christmas’s with lots of ricotta and a bit of mozzarella and grated parm reggiano. And extra meat sauce. Kids loved it but said ‘dad, lasagna this year’. _
