With sous vide, you get a uniform color/texture/degree of doneness throughout the steak. Only issue is that you will need to sear the outside to get caramelization. You could do this in a pan, broiler or torch, the latter which is my preference. sounds great for preparing your meals week in advance. Do your steaks and veggies on sunday while not watching the Jets, vacuum seal it and sous vide on Thursday Man after my own heart. Exactly right, 2mile. Seems perfectly suited for that system of preparation. I first had sous vide food in Tours, France in like 1995. Didn't really get the concept until I tasted the food. Incredible technique for meat and especially fish. Not sure why I never bought the device before.

Took some benadryl n ibuprofen, gonna have a coors tall boy after this and take a nap

Umm, isn’t today a work day? Not in Georgia... got 1/4 inch of snow. They just shut down everything since the roads get slick. The hills get iced and its kinda fucked really 14 inches in Pittsboro and 10 in Raleigh yesterday. I am in my office, sober and not hung over, this morning. What's your excuse?

Update: Just sent back my sous vide device. Too much of a hassle (investment in time cooking things as well as accoutrements necessary for the cooking process) for this old dude to pursue.

The hills get iced and its kinda fucked really Remember when Atlanta got 1/4 of snow before and it shut down the city, stranded people all over the place? They literally had no ability to treat the roads...deal with the ice..no plows/salt trucks etc....major roads stopped dead and people walking home or sheltering in place. My buddy walked over 5 hours to get home to Alpharetta. Iffin I remember, they fucked up by closing the schools/gov. offices all at the same time in the middle of the storm and everyone hit the roads at once.

Update: Just sent back my sous vide device. Too much of a hassle (investment in time cooking things as well as accoutrements necessary for the cooking process) for this old dude to pursue. Probably not as much fun as throwing a steak on a grill and drinking beer while it's cooking too, amirite? There is definitely that aspect, jay. It was a gift from my wife who knew I had wanted a sous vide system for years. Problem for me is that I just can't go in half cocked. I was looking to buy the vacuum bags, cooking water balls, various sized cooking vessels and (you'll love this) either a larger torch than the one I own or (my preference) investing in a Searzall attachment for the new torch. Just wound up being more than I wanted to spend. Plus, as I said. I'm getting too old for this shit. I did not want to plan out long cooking schedules where I'd have the sous vide machine on for 1-2days. Fuck that noise. I'll continue to use the techniques that have e me well for so many years.

Trick for me was learning the technique of getting a good sear/crust in a hot pan then finishing in a 300 degree oven. This method allows you to cook the meat from rare to well done and everything in between. Plus, you can do a whole bunch at a time.
