You got me. Whole tenderloin. First, make sure the chain and silverskin are removed (if you got it from a butcher you should be good). Do you have a big enough cast iron pan for searing the whole thing? If not, I recommend cranking your grill all the way up to the highest temp, searing no more than two minutes a side and then putting it in the oven preheated at 225° until the internal temp reaches 125°. Rest for 10 minutes and slice. Borgo, chime in if you think otherwise. Who? Think he died in Osaka a few years back. Pretty much how I'd (he'd) do it, JT. I might quibble about the oven being a bit hotter. You don't need my advice. You'e a great cook, especially with meat (no, I'm not going for a joke).

Bought this solely on your review. Came in the mail today. Roasting a filet tomorrow. dont fuck me over. No joke, I have had mine for what has to 10 plus years. All I've ever done is change the battery. Good luck. Hope you have the same experience as me. Worked flawlessly. Checked temp, rang on at about 121. Left it in another 5 or so minutes. Let it sit on the cutting board while I made gravy with the pan drippings. Was a perfect medium rare. didnt do JTs method. Preheated oven to 450. Put in the oven, turned to 350 after about 15 or 20 mins for the rest of the way.

Glad you dig the DeltaTrak. Used mine for some haddock yesterday.

Salt and pepper, put it in a roaster pan, onion and carrots around it, or whatever vegetables you want. cook it in the oven until it falls apart. Make gravy for the mashed potatoes with the drippings. That's my way anyway. super easy.

Interesting. Will try, do you make your own, or store bought? Store bought is fine, but add more horseradish. I feel like the public always gets screwed out of horseradish buying bottled Bloody Mary mix. I have kept a jar of this in my fridge without fail. Just used some in tuna salad earlier today.

Bloody Mary mix?! How much? All of it, whole bottle. But add more horseradish. You use that as your whole liquid base? instead of water or broth or wine? never. ever heard of that but may try why not. how bout onion soup mix or whatever
