also, not as easy to over salt if using kosher. I worked with a cook who smoked, dude could not taste, he over salted the shit out of every soup he made

I've grown to like IPAs a lot more over the past couple years. I'm certainly no beer connoisseur but starting to find my preferences in the IPA world and looking for suggestions. Out west Ballast Point Sculpin has become quite popular. I'm also a big fan of Lagunitas. My best advice would be to try the locally brewed beers. Lagunitas and Ballast Point are some great larger breweries that crank out some delicious brews but I always end up gong local out here in NM. I'm not sure what the brewery scene is like out there but if you can get your hands on a La Cumbre Elevated IPA from Albuquerque do it. Easily the best IPA I've ever tasted but I can get it straight from the source.

I like all the one mentioned but Lagunitas has become a "go to" and Ballast Point is still something special. Amazing new brewery/restaurant location in Seal Beach, CA as well. Right on the water. You can sample new/experimental beers for free practically all day. They used to be small and local to San Diego but were recently bought for $1 Billion (yeah, billion with a "b") I think by Constellation Brands. Not bad for some SoCal dudes who started micro brewing out of their garage in the late 90's.

Not bad for some SoCal dudes who started micro brewing out of their garage in the late 90's. Good for them. Actually a ton of origianl micro breweries are owned by a big company now. My local, Breckenridge Brewery was bought by InBev(Bud), but they let them run the local here as they wish, the head brewer can make what he likes and does. The cool thing that InBev gave them was a "crowler machjine" instead of the growler bottle, this is a can that they fill and the machine crimps the top, so you have a canned beer that can last for about 10 days. I dont mind Goose Island, but I believe they are owned by InBev or maybe the company that owns Miller.
