If you're so inclined to slum it down to the common folk, you may wish to try bacon with that, plus cheese, minus the avocado. A bacon, egg, and cheese burger. Equally outstanding. Egg has to be over easy or sunny side up. You bet your ass it does.

Just made burgers on a cast iron skillet on the grill. 50% ground chuck 50% ground short ribs. Lots of ground sea salt. Brioche buns (very little vaginal yeast by the taste of them), red leaf lettuce, heirloom tomato, avacado and a fried egg. Outstanding. _ Question - did you have to go to a butcher for the ground short ribs, find it at a grocery store or grind it yourself? I know my local grocery store(s) don't carry it.

Best Italian food I've ever eaten..... Luccas in Amsterdam. CHef makes his own cheese. No veal or eggplant on menu. This was deep Italian dishes..... we ordered Fresh Vegetable Ravioli. literally fresh chopped veggies in Ravioli. linguine with meat sauce. The best sauce ever and I'm half Italian and have eaten in so many NY Italian pork stores. Attachments:

Short ribs hold up in burger form without slow cooking. Good to know, thanks. I never thought of it before and in my years of watching foodie shows I'm constantly seeing these fatty juicy burgers and the guys are grinding a mix of fatty cuts. I usually just buy the 80-20 mix in the grocery store but the last few times I've grabbed short ribs and some chuck and asked the butcher to grind it. Doesn't cost anything and it really makes a great burger. _
